IdleRye is a modern American restaurant from Bruce Wills, Daniel Wills and Chef Ray Skradzinski of restaurant group Smoke & Mortar. Inspired by each of the owners’ family histories – Skradzinski’s Polish background and the Wills brothers’ Louisiana roots – IdleRye creates rich, colorful dishes with a global flair. The menu focuses on shareable appetizers, housemade pastas & sausages and fresh craft cocktails inspired by the prohibition era.

Bruce Wills
Owner & Operator

With over 22 years in the food and beverage industry, Bruce Wills knows the value of creating meaningful culinary experiences. From local concepts and bars to country clubs, Wills worked his way from Southern California to Dallas, where he eventually became a regional operator for Wolfgang Puck Fine Dining Group. In 2015, Wills pursued his lifelong dream of developing his own restaurant with The Table, a Flower Mound concept created and managed alongside brother Daniel Wills and former Five Sixty chef Ray Skradzinski. At The Table and IdleRye, Wills brings his expertise in restaurant management to diners across the DFW metroplex.

 

Daniel Wills
Owner & Operator

Since the age of 20, Daniel Wills has worked in the food and beverage industry, gaining valuable experience at a variety of fine dining establishments in California, Florida and Las Vegas. As a bartender and general manager at the renowned Wolfgang Puck Bar & Grill, Wills broadened his knowledge of the industry and developed a passion for the craft of mixed drinks and wine. Now the owner and operator of IdleRye and The Table, Wills combines his desire to deliver well-rounded dining experiences with his skills making craft cocktails and curating fine wine and spirits.

 

Ray Skradzinski
Owner & Chef

A New Jersey-native, chef Ray Skradzinski started working in kitchens as a teenager, steadily gaining experience through his early twenties at country clubs, inns and small restaurant groups across the Northeast. During his time as executive sous chef at Wolfgang Puck American Grille and Five Sixty, Skradzinski honed his culinary knowledge of a variety of cuisines, creating dishes from-scratch using the freshest ingredients around. As the chef and owner of IdleRye and The Table, Skradzinski creates delicious culturally-inspired meals with a focus on fresh, seasonal ingredients.
